Baked goat cheese appetizer with fresh tomato/basil salsa


We first tasted this at “The Keg” restaurant. I found a copycat recipe online and it is pretty close to the restaurant version. Salsa 1 large chopped tomato 3-4 basil leaves chopped 1/8-1/4 cup finely chopped red onion 1 clove minced garlic salt and pepper to taste 2 tbsp olive oil 2 tbsp red wine vinegar or balsamic vinegar Stir together, cover and chill Toast 1/4-1/2 cup sliced almonds in a saucepan or in the oven until light brown Coat goat cheese log/roll in egg white and coat with the almonds Baked cheese in a 325F oven for about 10 minutes. Served baked cheese with crackers, melba toast, baked bagel chips or baked pita chips and the salsa….
